Ingredients: (Yield 2-3 servings)
- 1 can of green beans (I used organic, but any will do)
- 3-4 baby (red or gold) potatoes (quartered)
- 1/2 lb boneless skinless chicken breast
- 1 Packet Ranch dressing mix (or 3 Tbsp, if you buy the large container)
- 1 Tbsp. Extra Virgin Olive Oil
- Preheat oven to 350 degrees F
- Line a 9x9 baking dish with foil (makes for easy clean up), and spray with cooking spray (again I used my Misto that has EVOO, Extra Virgin Olive Oil, in it).
- Put cut potatoes in a microwave safe dish, cover with saran wrap and microwave for approximately 3 minutes.
- Open the green beans and drain off most of the water, just leave a little. Put on one end of the baking dish.
- Put the chicken pieces in the middle.
- Take the potatoes out of the microwave, remove the plastic wrap, drizzle with some EVOO, then place on the other end of the baking dish.
- Sprinkle everything with the ranch dressing mix.
- Cover with foil and bake for 20-45 minutes, until chicken is cooked through. The time will vary based on the thickness.
